Balsamic Strawberry and Chicken Pizza

This is my variation inspired by the fabulous recipe from Closet Cooking - Thanks for the great inspiration Kevin! I used my own basic pizza crust and made mine with more of a sauce and fewer items layered; I'm not big on the piling my pie high to the sky. I also adjusted it for my taste preferences.















Crust

Sauce

  • 1/3 cup balsamic vinegar
  • 1 Tbsp sriracha
  • 3/4 cup fresh strawberries, pureed
  • 1/4 cup sweet onion, pureed
  • 1/4 cup fresh cilantro, pureed (loose measurement, not packed)

Toppings

  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup fresh parmesan cheese, shredded
  • 1 cup grilled or broiled chicken, shredded or finely chopped
  • 1/4 cup strawberries, sliced
  1. Prepare pizza crust as instructed in that recipe. Place on a large cookie sheet or pizza stone, but do not bake yet. Preheat the oven to 500ºF.
  2. In a medium sauce pan, combine all of the sauce ingredients, bring to a boil, and reduce to a simmer. Allow to thicken about 5 minutes.
  3. In a small bowl, mix the shredded chicken and about 1/4 cup of the balsamic sauce, stir to coat the chicken. Set aside.
  4. Spread the remaining balsamic sauce on the unbaked pizza crust, leaving some space around the outer edge.
  5. Sprinkle 1 1/4-cup of the mozzarella cheese and all of the parmesan cheese evenly over the sauce.
  6. Spread the shredded chicken evenly over the cheese.
  7. Arrange the sliced strawberries on the pizza.
  8. Sprinkle the remaining mozzarella cheese on top.
  9. Place the cookie sheet and pizza on the middle rack of the oven and bake for 10-15 minutes, or until the edges and top begin to turn golden brown.
  10. Remove from oven and allow to cool for 5 minutes before serving. Enjoy!
